Our beef is born and raised right here in Three Rivers, California. The cattle spend about a year and a half on open pasture, grazing on grass and receiving alfalfa during the dry seasons. Once they reach approximately 900 pounds, they’re brought to Exeter for a 90-day finishing period, where they are fed a custom blend of grains, corn, almond hulls, molasses, alfalfa, oat hay, and other ingredients to enhance marbling and overall quality.
We sell our beef by the whole animal or by the side. If you’re interested in a smaller amount, we recommend partnering with a friend or family member, as it’s easiest for small groups to divide the cuts among themselves.
Our pricing is simple and transparent. We charge $8 per pound based on the hanging weight—the weight after the organs, blood, and hide are removed. The Meat Locker will then apply a separate fee for cutting and wrapping. Exeter Meat’s current rate is about $1.40 per pound, though we’re happy to work with any Meat Locker you prefer—just let us know in advance. There is also a flat kill fee for the mobile butcher who harvests the animal onsite, typically ranging from $60 to $80 per side.
A typical side of beef weighs between 300 and 400 pounds, though this can vary. Your order will be custom cut and wrapped to your specifications, including steak thickness, ground beef package size, preferred roast cuts, and more.
